Healthy, versatile and all-out delicious, quinoa is the salad companion we didn't know we needed. Rising to recent fame on foodie scenes across the globe, quinoa salads are revitalising healthy eating everywhere. And we love quinoa here in Spain too, with places like Teresa's, Keik and Panela & Co all offering up their own quinoa-packed-goodies.

Seriously good seeds

Quinoa, simply put, is a seed. Coming from a plant called chenopodium quinoa, it's harder, bitter-tasting outer shell is removed, and it's cooked up until soft and delicious. You might think of it as something between couscous and rice, and it's used in a similar way – soaked and then boiled, seasoned and served hot or cold.

And just like rice, this wonderful stuff comes alive when mixed with exciting ingredients – sub in some juicy beetroot, a dollop of salty tahini or opt for some halloumi. The flavour world is your oyster with this one.

The mother of all grains?

This delicious seed goes way back, with people first cultivating it around 3,000 to 4,000 years ago in the Andes. It is a main staple of Andean diets, but until a few years ago, relatively unknown outside of its native country. The Incas thought it was so wonderful that they called it the 'mother of all grains'  – they believed that quinoa was sacred, and today's foodies would surely agree.

It's only recently that quinoa has made its way onto dinner plates across the world, but it burst into our diets with a bang. The United Nations even declared 2013 the international year of the quinoa.

Quinoa at its finest

So if you feel like giving quinoa a go, Panela and Co. have got all sorts of goodies sporting this seed. We love The Butchers Quinoa Salad, where beetroot, peanuts and cottage cheese are met with broccoli and spinach. The Emirates Salad is also a great choice, where you'll find falafel, feta, hummus, cucumber, tzatziki sauce, quinoa and kale for a nutrient packed wonder.

If you prefer the sweeter things in life but still love all of those natural sugars, Keik is the place for you. Here you'll find quinoa paired with strawberries, pineapple, peach and kumquats. It's crowned with crispy prawns and tamarind oculi and then garnished with a zingy kumquat and bergamot vinaigrette.

Combining Hawaiian and Japanese cooking, the Red Quinoa and Poke Tuna Bowl from Teresa's is not to be missed. In this fusion creation you'll find red quinoa with yellowfin tuna sashimi as the base, topped off with avocado, wakame seaweed, a little sesame and Teresa's special Miso Ginger Dressing.
