Healthy, versatile and all-out delicious, quinoa is the salad companion we didn't know we needed. Rising to recent fame on foodie scenes across the globe, quinoa salads are revitalising healthy eating everywhere. And we love quinoa here in Spain too, with places like Teresa's, Keik and Panela & Co all offering up their own quinoa-packed-goodies.
Quinoa, simply put, is a seed. Coming from a plant called chenopodium quinoa, it's harder, bitter-tasting outer shell is removed, and it's cooked up until soft and delicious. You might think of it as something between couscous and rice, and it's used in a similar way – soaked and then boiled, seasoned and served hot or cold.
And just like rice, this wonderful stuff comes alive when mixed with exciting ingredients – sub in some juicy beetroot, a dollop of salty tahini or opt for some halloumi. The flavour world is your oyster with this one.
This delicious seed goes way back, with people first cultivating it around 3,000 to 4,000 years ago in the Andes. It is a main staple of Andean diets, but until a few years ago, relatively unknown outside of its native country. The Incas thought it was so wonderful that they called it the 'mother of all grains' – they believed that quinoa was sacred, and today's foodies would surely agree.
It's only recently that quinoa has made its way onto dinner plates across the world, but it burst into our diets with a bang. The United Nations even declared 2013 the international year of the quinoa.
